AIR FRYER POTATO TOTS

Try these air fryer potato tots!
Not only are these tots better than greasy potato chips, but they are also crispy on the outside and fluffy on the inside. With just a few ingredients and minimal effort, you’ll get the best potato tots that are insanely addictive, guaranteed to keep you coming back for more!

Ingredients
  

  • 150 Grams Sweet potato
  • 150 Grams Potato
  • 120 Grams Grated mozzarella cheese
  • 40 Grams Corn flour
  • 2 Tbsp Honey
  • 1 Tbsp Chilli oil
  • 1 Egg

Instructions
 

  • Place a pot with water on the stove top. Add in the sweet potatoes and potatoes allow to parboil for 18-20 minutes.
  • This works best for larger sweet potatoes (like two large ones), so if using smaller potatoes start to check around 15 minutes that a fork can stick into the middle of it, but is still firm.
  • Once ready, remove from boiling water and run cold water over the potatoes to stop them from cooking. Allow to cool completely. Once potatoes are cooled, peel the skins off the potatoes.
  • Using a large side of a grater, grate all the potatoes, add the shreds into a large bowl.
  • Add the honey, chilli oil, grated cheese, egg and corn flour. Mix until well combined. Roll into balls and shape into tots, by holding both ends with index finger and thumb, then rub/roll the centre into little totes.
  • Using a regular or silicone pastry brush, brush the tater tots with olive/coconut oil on the outsides. This will really help it to crisp up. I like to brush both sides.
  • Bake in the air fryer for 12-15 min at 200 degrees.

Notes: Make sure to mix the tots around half way through baking

ONE PAN EGGPLANT PASTA

Italian folks, close your eyes—this one-pan eggplant pasta recipe is for all you looking for a hassle-free meal! There’s nothing better than a one-pan dish that requires minimal prep and clean-up, especially after a long day of work. With fresh flavours from fragrant basil, juicy tomatoes, and tender eggplant, this recipe offers a nourishing, vegetable-forward meal.

Ingredients
  

  • 4 tbsp olive oil (1/2 to sauté eggplant, 1/2 to sauté onion)
  • 3 medium eggplants
  • 1 brown onion
  • 4 cloves garlic
  • 1 cab concentrated tomato paste
  • 2 cups water
  • 55 grams Kalamata olives
  • 2 bunches truss cherry tomatoes
  • 1/2 cup cup fresh basil
  • 50 grams Parmesan
  • 75 grams light mozzarella
  • ++ extra parm and basil to serve

Instructions
 

  • Dice the eggplant into small pieces. Dice the onion and finely chop the garlic. Wash the tomatoes
  • Sauté in a large saucepan with 1/2 the olive oil for 5 minutes (eggplant shouldn’t be completely soft). Set aside
  • To the same pan add the remaining oil, garlic and onion and sauté until translucent and soft
  • Add in the tomatoes, canned tomatoes, water, olives and eggplant. Cover and simmer low and slow for 20 minutes (this is important, DON'T RUSH THIS STEP)
  • While the pasta sauce is simmering, cook your pasta al dente
  • After 20 minutes add in your fresh basil (sliced), Parmesan and mozzarella. Cook for another 5 minutes
  • Finally add in your cooked pasta, mix well. Serve and top with as much extra basil and parm as your heart desires

Sweet Potato Toast

Breakfast can sometimes be boring. 
Another day, another avocado toast or the plain old oatmeal. But what if we told you there's a delicious solution that involves a humble sweet potato? Yes, you read that right!
We’ve got not just one, but FIVE sweet potato toast recipes to spice up your morning routine! It's a great way to use up leftover sweet potatoes and add an interesting twist to your breakfast. Personally, our favourite is the Strawberry Cream Cheese Toast—nothing beats having dessert for breakfast!

Ingredients
  

T+J Sweet Potato toast

  • 2 Tsp Strawberry Jam
  • 2 Tsp Tahini paste
  • 2 Tbsp Crushed roasted almonds
  • 2 Tsp Honey

Persimmon Vanilla spice toast

  • 3 Tbsp Greek yoghurt
  • 1/3 Tsp Vanilla bean paste
  • 1/2 Tsp Cinnamon
  • 1 Tbsp Honey
  • 1 Sliced persimmon OR apple (Optional to grill them)
  • 2 Crushed roasted almonds

Pesto Egg toast

  • 2 Tsp Pesto
  • 2 Sunny side up egg

Avocado sun-dried tomato toast

  • 1/2 Sliced or smashed avocado
  • 1/2 Lemon juice
  • 1 Pinch salt and pepper
  • 4-5 Sun-dried tomatoes

Strawberry Cream cheese toast

  • 2 Tbsp Cream cheese
  • 1 Tbsp Honey
  • 2-3 Freshly sliced strawberries

Instructions
 

  • Method for making the “Toast”.
    Use a large sharp knife to slice the sweet potatoes lengthwise, or alternatively make use of a mandolin. Aim to cut the sweet potatoes into 1/4-1/3 inch slices. Avoid slicing them too thin as they will lose their shape and if they are too thick they will not cook as fast in the toaster.
    Lightly spray the slices of sweet potato with cooking spray or gently rub olive oil, by slightly dabbing the excess oil off with a paper towel.
    Each toaster is different, therefore aim to toast these slices on a medium heat until tender but not too soft. Allow to cool on an airing rack not a plate as they will get soggy.
    The ratios for the below will allow you to spread 2 of each flavour.
    - T+J Sweet Potato toast
    Start by spreading the strawberry jam, followed by a drizzle of tahini paste, sprinkle some crushed almonds and finally drizzle with honey.
    - Persimmon Vanilla spice toast
    Combine the yoghurt, vanilla bean paste and cinnamon along with the honey. Mix well, spread the sweet potato toast, add some persimmon slices, crushed almonds and a little extra honey.
    - Pesto Egg toast
    Spread the toast with the pesto, place your fried egg on top. Sprinkle with salt and some olive oil.
    - Avocado sun-dried tomato toast
    Optional, to layer the toast with sliced avocado, sun-dried tomatoes drizzle lemon juice and sprinkle some salt and pepper, optional you can combine all the ingredients into a food processor for a few seconds creating a smashed avocado topping.
    - Strawberry Cream cheese toast
    Combine the cream cheese or cottage cheese with honey. Mix well and spread on top of the toast. Add some fresh slices of strawberry. You can also sprinkle a few mint leaves on top.

Creamy Leek Zucchini Butter Bean Bake

This is a PSA for anyone looking for a budget friendly, protein-rich meal!
Check out this versatile and creamy braised leek, zucchini, and butter beans dish. It’s perfect for those times when you want a delicious, protein-packed meal and you have a can of butter beans sitting in your cabinet.
This dish is incredibly versatile—perfect for breakfast, lunch, or dinner. The combination of browned leeks, zucchini, and butter beans creates a comforting, flavorful harmony that will have you reaching for seconds! Pair it with a crunchy piece of toast, and you have a hearty meal!

Ingredients
  

Filling

  • 2 Tbsp oil
  • 1 Clove Garlic finely chopped
  • 2 Leeks finely sliced
  • 2 Large zucchini chopped
  • 1 Can Butter beans
  • Rosemary (optional)

Sauce

  • 2 Zucchini Chopped
  • 1/2 Leek Chopped
  • 1/2 Cup Tahini paste
  • 1/3 Cup Oil
  • 3 Cloves of garlic
  • 1 Tsp Vegemite
  • 2/3 Cup boiling water

Instructions
 

  • For the preparation of the sauce. Preheat the oven on high at 240 degrees Celsius. Or alternatively use an air fryer.
  • Roast the chopped zucchini, leeks for the sauce with the chopped garlic and oil for 10-12 min on high.
  • In the meantime start preparing the ingredients for the filling, in a heated pan, add the oil, followed by the chopped garlic, leeks and zucchini. Stir occasionally, allowing it to cook through until golden. In the meantime prepare the sauce.
  • Remove the roasted vegetables from the oven/ air fryer. Place the roasted vegetables to a high speed blender along with the oil where the vegetables were roasted in.
  • Add boiling water, Vegemite and tahini paste. Blend the entire mixture until thick and creamy. If you find the mixture too thick to your licking, add a little extra water. If you feel you would like a little extra salt, add a tiny extra Vegemite.
  • Once blended pour the mixture to the rest of the ingredients in the heated plate, thereafter add the butter beans (strained and liquid removed). Gently stir the ingredients together until well combined to allow it to simmer for about 5 min.
  • Serve immediately with a side of freshly baked bread or pita wraps.

Notes

The roasted vegetables in the sauce enhances the flavour of the dish creating a roasted nutty savoury flavour that will make you want more.

San Choy Bow

Lettuce puts you onto the solution for an 'I don’t know what to cook' situation when you’re craving something quick, easy, and healthy that won’t put you to sleep.
Using ingredients straight from our Farmers Pick box, you can whip up classic, tasty Chinese lettuce wraps in just 15 minutes of cooking time.
Not only are these lettuce wraps delicious, but they’re also a fun way to enjoy a balanced meal. You get savoury ground meat as protein and heaps of veggies, all smothered in a flavorful San Choy Bow sauce. Need more veggies? Just swap the ground meat for extra mushrooms!
We’ve kept this recipe simple for you, and if you double the batch, you'll have leftovers that taste even better the next day.

Ingredients
  

  • 1.5 Tbsp Chilli oil
  • 1 Onion finely chopped
  • 2 Carrots finely chopped
  • 3 Portobello mushrooms finely chopped
  • 1 Tbsp Ginger finely chopped
  • 1 Capsicum finely chopped
  • 1 Pack Turkey mince (optional) or vegan option you can use beans.
  • 1 Pack San Choy Bow sauce
  • Crushed nuts (Optional)

Instructions
 

  • Heat oil in a wok or large skillet over high heat. Add onion and ginger, fry until the onion starts to brown in colour. Add your turkey mince. Keep mixing the mince around whilst it is frying allowing it to brown evenly. After 5 min, add all the other ingredients for the filling.
  • After 4 minutes, add your pack of San Choy Bow sauce to the mixture. Continue stir frying all the ingredients for another 5-7 min.
  • Once cooked, remove the pan from the heat. Set aside as you place your lettuce leaves onto plates. To serve, spoon some Filling into the lettuce cups. Top with nuts or seeds, bundle it up and enjoy!

Notes

If you would like your vegetables to be cooked longer, you can extend the cooking time by a few minutes.
*Adding some crushed nuts or peanuts is optional. Alternatively you could also add sesame seeds.
