Sweet Potato Toast

Breakfast can sometimes be boring. 
Another day, another avocado toast or the plain old oatmeal. But what if we told you there's a delicious solution that involves a humble sweet potato? Yes, you read that right!
We’ve got not just one, but FIVE sweet potato toast recipes to spice up your morning routine! It's a great way to use up leftover sweet potatoes and add an interesting twist to your breakfast. Personally, our favourite is the Strawberry Cream Cheese Toast—nothing beats having dessert for breakfast!

Course Breakfast

Ingredients
  

T+J Sweet Potato toast

  • 2 Tsp Strawberry Jam
  • 2 Tsp Tahini paste
  • 2 Tbsp Crushed roasted almonds
  • 2 Tsp Honey

Persimmon Vanilla spice toast

  • 3 Tbsp Greek yoghurt
  • 1/3 Tsp Vanilla bean paste
  • 1/2 Tsp Cinnamon
  • 1 Tbsp Honey
  • 1 Sliced persimmon OR apple (Optional to grill them)
  • 2 Crushed roasted almonds

Pesto Egg toast

  • 2 Tsp Pesto
  • 2 Sunny side up egg

Avocado sun-dried tomato toast

  • 1/2 Sliced or smashed avocado
  • 1/2 Lemon juice
  • 1 Pinch salt and pepper
  • 4-5 Sun-dried tomatoes

Strawberry Cream cheese toast

  • 2 Tbsp Cream cheese
  • 1 Tbsp Honey
  • 2-3 Freshly sliced strawberries

Instructions
 

  • Method for making the “Toast”.
    Use a large sharp knife to slice the sweet potatoes lengthwise, or alternatively make use of a mandolin. Aim to cut the sweet potatoes into 1/4-1/3 inch slices. Avoid slicing them too thin as they will lose their shape and if they are too thick they will not cook as fast in the toaster.
    Lightly spray the slices of sweet potato with cooking spray or gently rub olive oil, by slightly dabbing the excess oil off with a paper towel.
    Each toaster is different, therefore aim to toast these slices on a medium heat until tender but not too soft. Allow to cool on an airing rack not a plate as they will get soggy.
    The ratios for the below will allow you to spread 2 of each flavour.
    - T+J Sweet Potato toast
    Start by spreading the strawberry jam, followed by a drizzle of tahini paste, sprinkle some crushed almonds and finally drizzle with honey.
    - Persimmon Vanilla spice toast
    Combine the yoghurt, vanilla bean paste and cinnamon along with the honey. Mix well, spread the sweet potato toast, add some persimmon slices, crushed almonds and a little extra honey.
    - Pesto Egg toast
    Spread the toast with the pesto, place your fried egg on top. Sprinkle with salt and some olive oil.
    - Avocado sun-dried tomato toast
    Optional, to layer the toast with sliced avocado, sun-dried tomatoes drizzle lemon juice and sprinkle some salt and pepper, optional you can combine all the ingredients into a food processor for a few seconds creating a smashed avocado topping.
    - Strawberry Cream cheese toast
    Combine the cream cheese or cottage cheese with honey. Mix well and spread on top of the toast. Add some fresh slices of strawberry. You can also sprinkle a few mint leaves on top.
