Orange and Olive Oil Cake

Orange and Olive Oil cake

Citrus fruits are one of the most discarded fruits or veggies with 50% never leaving the farm! @therese.spoon has made us a delightful Orange and Olive Oil cake to use up all those perfectly imperfect oranges.

Ingredients
  

  • 1 tbsp freshly grated orange zest
  • 1 tbsp fresh orange juice
  • 2 small eggs at room temperature
  • 150 g caster sugar
  • 125 g all-purpose flour
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 125 ml olive oil
  • 150 ml milk, at room temperature
  • 2 tbsp flaked almonds

Instructions
 

  • Pre-heat the oven to 190*C. Line your springform cake pans with parchment paper on the base + sides.
  • Sift together the flour, salt, baking powder & baking soda, whisk to combine & set aside.
  • In the bowl of a stand mixer, add the eggs, sugar & orange zest. Mix on high for 5 minutes until thick & fluffy. Slowly drizzle in the olive oil and mix until it’s incorporated, then reduce the speed to low and slowly add the milk & orange juice. Add the flour mixture gradually and mix until everything is just combined- you’ll want to avoid over-mixing it here.
  • Pour the batter into the prepared pans, sprinkle with flaked almonds, and bake for 30-35 minutes (you’ll need to add an extra 10 minutes if baking one larger cake). The cake is done when the almonds are lightly golden and a skewer inserted into the centre comes out clean. You may need to loosely lay a piece of foil over the top if it is browning too quickly.
  • Remove the cakes from the oven and leave to cool for 10 minutes, before gently removing the cake from the pan. Cool completely on a baking rack before serving.

We've teamed up with professional chef @dobbers__ to share handy no waste recipes. Here he shows us how to use up all the leftover veggies you've got sitting in the fridge and make a delicious Japanese vegetable curry.

Ingredients
  

  • 200 g S&W GOLDEN JAPANESE GOLDEN CURRY PASTE MID HOT, CHOPPED UP
  • 250 g OKONOMIYAKI BULLDOG SAUCE
  • 750 g BROWN ONION SLICED
  • 150 ml OLIVE OIL
  • 2.5 l BOILING WATER
  • 1.5 kg MIXED DICED VEGETABLES

Instructions
 

  • SEASON VEGETABLES, DRIZZLE WITH OIL AND 100ML OF THE BULLDOG SAUCE, ROAST ON 200C FOR 15-20 MINUTES UNTIL GOLDEN AND DELICIOUS WITH STILL A LITTLE BIT OF TEXTURE REMAINING, SET ASIDE.
  • IN LARGE POT ON HIGH HEAT, CARAMELISE ONIONS AND IN OIL, ONCE CARAMELISED, DRIZZLE WITH REMAINING BULLDOG SAUCE, COOK FOR 2 MINUTES THEN ADD BOILING WATER. BRING TO BOIL, ONCE BOILED STIR THROUGH YOUR CHOPPED UP CURRY PASTE COOK OUT ON LOW FOR 45 MINUTES, CONSTANTLY STIRRING TO ENSURE CURRY SAUCE DOESN’T STICK AND BURN ON BASE OF POT.
  • ONCE CURRY SAUCE HAS COOKED STIR THROUGH VEGETABLES AND SERVE WITH RICE, FRIED EGG, SLICED SPRING ONION & SESAME SEEDS.

Ingredients
  

  • 2 kg MINCED/FINELY BLITZED VEGETABLES (WHAT EVER YOU HAVE LEFT OVER IN YOUR FRIDGE)
  • 200 g DICED ONION
  • 20 g SLICED GARLIC
  • 100 ml OLIVE OIL
  • 2 BAYLEAF
  • 11 g SWEET PAPRIKA
  • 5 g MIXED HERB
  • 4 g BLACK PEPPER
  • 2 g NUTMEG
  • 1 BIG PINCH ALL SPICE
  • 1 BIG PINCH CINNAMON
  • 1 SMALL PINCH MIXED SPICE
  • 1 TINY PINCH CLOVE
  • 2 g CUMMIN
  • 2 g TURMERIC
  • 2 g ROSEMARY
  • 2 750g JAR TOMATO PASSATA
  • 13 g SUGAR
  • 50 ml BALSAMIC
  • 200 ml WATER

Instructions
 

  • PLACE VEGETABLES ONTO TRAY, SEASON WITH SALT, PEPPER & ITALIAN MIXED HERBS, ROAST IN OVEN ON 200C FOR 15-25 MINUTES DEPENDING ON HOW GOOD YOUR OVEN IS, YOU WANT THE VEGETABLES COOKED AND LIGHTLY CARAMELISED, SET ASIDE.
  • LIGHTLY CARAMELISE ONIONS, GARLIC IN OIL, DEGLAZE WITH BALSAMIC VINEGAR, ADD TOMATO PASSATA, ADD VEGETABLES, ADD HERBS & SPICES.
  • TURN HEAT TO LOW, COOK OUT FOR APPROXIMATELY 45 MINS TO 1 HOUR WHILE CONTINUOUSLY STIRRING. (NOTE: YOU MAY NEED TO ADD MORE WATER THROUGHOUT COOKING PROCESS)

Farmers Pick is teaming up with the iconic Melbourne “Around The Bay” event to save 6000 single Bananas from Supermarket Rejection.

In Melbourne, Alison McCormack, CEO of Bicycle Network is supporting Farmers Pick to supply 8000 free bananas to their riders taking part of the iconic Melbourne bike event, United Energy Around The Bay on Sunday October 8th.

“We have been running this event for more than 30 years and we absolutely love working with Farmers Pick,” says Ms McCormack. 

“Their passion for sustainability and promoting healthy eating really aligns with our bike members so it was a no-brainer to support their banana farmers during their time of need. 

“We are sure the kids and families on our rides around Albert Park Lake will demolish their share of bananas and riders on the 100km, 135km, Classic and 300km distances will need a bit of extra sustenance too. It’s an absolute WIN WIN!”

Nodo helping Farmers Pick Rescue Bananas with Banoffee Pie Doughnut!

Nodo Donuts & Farmers Pick are teaming up to rescue single Bananas from Supermarket Rejection with a delicious Banoffee Doughnut during the month of October.

Every year, a mammoth 37 million kilograms of bananas are considered sub-standard by supermarkets and go to waste on Queensland farms – meaning they never actually leave the farm. This waste equates to a whopping 92.5 million kilograms of C02 emissions, while also putting unnecessary strain on the environment, farmers and fellow Australians. 

Since 2020 Farmers Pick has been working hard with local farmers to rescue their “imperfect” produce and to educate our nation that if a piece of fruit isn’t a “normal” size or shape it is perfectly great to eat and even more fun to use in the kitchen.

When Farmers Pick learned that the supermarkets reject single bananas, they had to do everything they could to raise awareness across the nation.

After hearing this terrifying, mind-blowing stat, Nodo Donuts and Farmers Pick have joined forces to host their own “QLD Banana Rescue” by launching October’s flavour of the month, “Banoffee Donut.”

Founder of Nodo, Kate Williams, passionate about sustainability and reducing food waste, is steering the collaboration with Farmers Pick in order to help save single bananas from going to waste on the farm.

“I love everything Farmers Pick stands for and I couldn’t believe it when I first heard about this – its a huge amount of waste and not to mention the impact it has on the environment and of course the farmers,” Williams said.

“I want to raise as much awareness as possible about these current business practices that are harming the environment and essentially costing farmers and Aussie consumers money.”

“I am always looking at ways to reduce waste within our business and raise awareness around sustainability. It’s something I am very passionate about and you can see throughout all of our stores – the next time you pick up a donut in a box, be sure to throw it in the compost rather than the bin! Some of our packaging is 100% compostable!”

“This collaboration was an absolute no-brainer for me and I am excited for you all to try October’s flavour of the month. There is absolutely nothing wrong with any of these bananas, the fruit itself is in perfect condition, they’ve just gone walk-about from the rest of the bunch.”

“This year, a banana farmer in QLD has asked us for help as he too is facing excessive rejections by supermarkets. The supermarket’s biggest reason for rejecting bananas is because they’re not in a bunch. When a bunch is picked, it naturally has a few bananas that sit off to the side, and these are trimmed in the harvesting process, to get the perfect bunch as defined by supermarkets.” states Josh from Farmers Pick.

Whether they are simply not attached to a bunch, too straight, too bendy, our farmer will continue to have huge numbers of his crop rejected, ending in an ongoing financial and environmental strain, both of which are completely avoidable.”

Major supermarkets only purchase 70 per cent of Australian bananas and the remaining 30% are rejected because they are trimmed to meet their perfect standards, or considered “the wrong size”, an “imperfect” shape, or not the “right” shade of yellow.

Launching on October 1, Nodo x Farmers Pick “Banoffee Donut” will help combat the cost and impact of this waste. Here are the stats:

  • Every donut that uses a Farmers Pick banana, will save 295gm of emissions 
  • Directly supports local farmers
  • Raises awareness about “rejected single bananas”

The Banoffee Donut will be available in all Nodo stores from 1st October and available to pre-order online at nododonuts.com
